Gourmet Traveller | Chilled Tomato Soup

  • 1kg Tomatoes
  • 1 Onion
  • 4 cups Vegetable Stock
  • 1/3 cup full cream
  • Freshly ground pepper
  • Squeeze of fresh lemon

Method (Serves 4):

  • Cut up the tomatoes and place them in a saucepan at low heat
  • Add onion, vegetable stock, and bring to boil
  • Place a lid on the saucepan and leave for 1 hour. Set aside to cool and stir contents until blended
  • Stir in full cream and season with pepper
  • Place in fridge to chill
  • To serve, pour into individual bowls and add a squeeze of fresh lemon
