Recipe | Clafoutis
Our Lifestyle contributor, Mélanie Beauvironnois, taps in to her French roots with this recipe for the classic Clafoutis dessert. We love the idea of a dessert that can be on the table in 25 minutes from just some fruit and pantry staples. Yum!
Clafoutis (recipe for 4 people)
- 400g of raspberries (alternatively, you can use cherries – the traditional fruit used in clafoutis – or plums)
- 2 eggs
- 65g of caster sugar
- 40g of flour
- 125ml of milk
- 1 teaspoon of vanilla seeds
Butter your dish and lay your fruit in it.
In a small bowl, whisk the eggs and sugar. Add the vanilla, then the flour, and whisk in the milk. Pour the mixture into your dish and bake for 45 minutes at 180 degrees (fan forced) if using a large dish, or 20 minutes if using individual ones. Test whether the cake is cooked with a knife. If it comes out clean, it’s ready! Eat lukewarm or cold, with or without ice-cream.
